I actually found this honey to be the most neutral tasting of all the pacifica honeys I have tried, though 'butterscotch' is a good description. But for me, there's single flavor shouting at me, and I don't find it spicy or strongly peppery, either. There are many of these pepper trees where I hike, and I think the berries smell clean and aromatic. Maybe it's just the variation to be expected in a nature-made product like honey, or maybe my tastes are wildly different. Whatever the reason, it's my favorite variety by far.

Bright yellow with dark brown balls. Has the taste and sweetness of processed molasses. Not what I would expect from cold processed honey.
Not a recommendation for those use to natural tastes - sweetness is almost unbearable.

I purchased this with my other favorites to try it out. It is similar to the avacado honey. My husband prefers the light sage honey but I enjoy the variety of honey types. This one is a tasty dark honey with notes of coffee, molasses, and butterscotch. It would overpower delicate foods but would enhance more robust fare.

Out of the 7 or so flavors of cold-pack honey we bought, the Cold Packed Brazilian Peppertree Honey (CPBPH) was the best for my cold and sore throat. My wife mixed in the CPBPH with some kind of Korean tea and lemon from our (almost) world/CA state record sized lemon Lisbon lemon tree. I could really feel that "strong bite" effect working on my sore throat. I even had to steal an extra spoon full to suck on straight to help in between tea cup fulls.

If you really love pepper, you might like this honey. There is a very strong almost pungent taste of pepper to this honey. It did not go well with any application, i.e. tea or spread on various items. Good luck to the pepper lovers out there!
